Vegetable salad with couscous

A food thermos is a handy thing for every day. But sometimes you have no idea what dishes it is suitable for? Probably, the first thing you thought - it is soup or porridge. We hasten to please you! You can even take even a salad with you.

Ingredients for 2 person:


— Couscous – 0.2 pounds

— Olive oil – 1 tbsp

— Cheese – 0.2 pounds

— Sweet pepper – 1/2 piece

— Cherry tomatoes – 0.2 pounds

— Lemon juice – 1 tbsp

— Parsley, cilantro, paprika, salt and basil – to taste



Instructions:


Let's start with the preparation of couscous. Fill it with 250 ml of boiling water, add 2 tbsp of olive oil, salt, stir, cover with a lid and leave it for 15 minutes.


Chop the Adygea cheese and fresh herbs. Dice the sweet pepper and halve the tomatoes.


Add cheese, tomatoes, peppers, chopped fresh herbs, spices, lemon juice and salt to the couscous. Mix thoroughly, garnish with a sprig of fresh basil and serve.


Add the sugar and stir until dissolved.Remove the lemon peel and pass the liquid through a sieve. Mix the mint base with the lemon juice.
